This dish is low in carbs but high in flavour. It’s quick and easy and, like many dishes I make, it’s great for leftovers or you can throw the extras in the freezer for later.
This is a classic dish of Spain, Latin America and Mexico with the flavour profile shifting slightly depending on where it’s made. Basically, arroz con pollo is chicken cooked with rice, onions, garlic, and tomatoes. Delish!
